I was lucky enough to marry someone that loves to cook, and not just easy things, the bigger the challenge the better! Well this year he decided to pickle his own corn beef for St. Patricks Day! He did all the research and 10 days ago began the process! Well last night we pulled that puppy out of the fridge and slow cooked it for a few hours and MMMMM had the most delicious corn beef and sour kraut sandwiches I have ever tasted!!!
Well, I was too busy eating to remember to snap a picture of the sandwich, but I did snap one while the corn beef was simmering!

Now I realize this doesn't look all that appetizing, but trust me when it was finished and placed between 2 slices of rye bread, Swiss cheese and sour kraut......it melted in your mouth!
I am already counting down the days until next St. Pats day!
